Introduction
I am not sure what the official definition of a superfood is, but it must include an extraordinary amount of nutrients contained within it. Wikipedia informs us that this is a marketing term to define food that has ‘supposed’ health benefits as some part of its nutritional profile, or its overall nutrient density. Some websites identify superfoods as blueberries, green leafy vegetables etc which they are, but I am referring more to health food supplements that are usually not on the grocery shelf, but more in specialty health food stores. Certainly, one of my favourites is Wheat grass juice powder which doubles up as a natural medicine as well, so like all medicines it should not be consumed indefinitely ( 2 months maximum ). Other products are nutritional yeast, Ashwagandha, Acai berries, Goji berries, brewers yeast etc. So let us discuss a few examples in these articles since technically they are nutritional supplements, but they are not consumables that every person takes.
Wheat grass juice powder
Self harvesting or purchase a commercial product
Wheat is what cooking flour is, ground, and refined from. Wheatgrass grows at an earlier stage so the grass grows from the wheat seed. The actual wheatgrass is a young sprouted grain from a wheat berry that is grown in late fall, and when it is about 4 -6 inches in growth ( which takes approximately 6 months) it is at the highest nutritional stage of growth. At this stage it mostly indigestible fibre except that each blade of grass contains tiny juice droplets, and it is this juice that is harvested to make the wheatgrass juice, and then dried into the wheatgrass juice powder that contains neither fibre nor gluten. The conversion from the juice of the sprouted wheatgrass to powder is achieved by a low heat drying process called Bioactive hydration. It is therefore recommended to take wheatgrass juice powder as opposed to wheatgrass powder which contains fibre, but the juice powder does not. If you visit the health food store you will see wheatgrass growing in oblong trays. If you have a healthy gut, you could consume it as is, since the juice remains in the grass blades, however, the soil that they grow the wheatgrass, may not have all of the nutrients that is available in the purchased finished products. Some wheatgrass products are grown in ancient sea beds that still contain all of the vitamin and minerals required for life, buried in the soil from the ocean that the wheatgrass berry absorbs. Furthermore, you need an appliance to squeeze the juice out of the wheatgrass and then special equipment to carefully dry it, without destroying the live enzymes, by applying too much heat, and finally after all that effort a tray of wheatgrass will only provide about 2 tablespoons of juice powder. You decide what’s most cost effective, a tray of wheatgrass providing about 2 tablespoons (30 grams) of wheatgrass juice powder that could cost upwards of $25, or a 300 gram container of ready made wheatgrass juice powder for $40, which means that the fresh wheatgrass that you have to process would cost you the equivalent of $250 for 300 grams.
In dedication to all the fallen and forgotten heroes of nutritional awareness
Dr Charles Schnabel ( 1895-1974) , was considered the father of wheatgrass in 1940, another American Nutritional legend whose dream was to see grass included as a valuable supplement to the American diet. His laboratory work showed that it boosted nutrition, built good blood and strengthened immunity. He became very close to making wheatgrass a household food stimulating the practice of selling grass in a can from drug stores across the US and Canada. In 1941, ‘Meadow Kist bread’ was being sold from Zinsmaster Baking company that included cereal grass. Schnabel’s idea was to reclaim and enrich the soils, and some farmers would grow 40% protein grass at higher profits than other crops, set up an industry to process and distribute the grass, and consumers would benefit nutritionally from a low cost product. But like all well meaning and vitally important nutritional programs on a grand scale, it was short lived. The other problem, it coincided with the end of WWII, when the returning troops who had been living on rations for most of the time, just wanted to eat unhealthy comfort food that they were raised on. So they and their families just wanted to eat any food to compensate for meagre times that they had endured while the war was raging. Today this fallen, forgotten hero could have turned the tide in terms of the availability of highly nutritional food en masse. Alas,him, and his wonderful ideas got swept into history and forgotten, along with other nutritional pioneers like Dr Royal Lee, Dr Gerson, Dr Weston A Price, Dr Francis M. Pottenger, Dr Roger J Williams, Dr Edward Howell, Dr John Beard and others. This trend has led to the rampant nutritional deficiency, that exists today in most of the populations on the planet. We are paying the price, many with our lives, by forgetting their life’s work and their contribution in trying to make a better, healthier future. There is however, one hero, or should I say heroine Ann Wigmore.
Ann Wigmore (1909-1994)
Ann Wigmore unfortunately fell foul of the medical establishment several times, when in 1982 she was sued for claiming that her health program that centred around wheatgrass could reduce or eliminate the use of insulin for diabetics, In 1988 she was sued again for claiming her ‘energy enzyme soup could cure AIDS, which despite her well intentions, made these claims that were not scientifically proven. A further episode involved 2 of her associates that claimed a regimen of raw food could help a woman’s husband to treat cancer. This situation was uncovered along with other claims, during a 4 year investigation on health care scams that was initiated in 1980 by the US House of Representatives Committee on Aging. Despite her problems in later life, she is still associated with the use of Wheatgrass as a beneficial health agent which it is, as we will see in the next section. However, I am sure wheatgrass helps in cancer, as does a raw food diet, but cancer is world war 1 trench warfare so to speak, so it is a disease ( or better defined to be the body’s extreme adaptation to an extreme nutrient deficient/Toxic body imbalance). Wigmore was born prematurely in Lithuania in 1909, and abandoned by her parents, because they felt she was too sick to accompany them to their new life in America, so they dumped her with grandmother, who was a naturalist, and eventually restored Ann back to health using natural herbs and grasses. At the age of 16 she wanted to join her parents and get an education in the US, because she was illiterate at this stage. Soon after arriving in the US she ended up with both legs severely damaged which became gangrenous from an automobile accident. The doctor recommended amputation but she refused and was sent home to her parents who virtually disowned her AGAIN, and it was her uncle that provided food for her. How could 2 parents have utter disregard for their offspring like this ??. It was at this point that using the skills that her grandmother showed her, she used various natural products like grasses to help her heal, but since Winter was upon her, the fresh grass would not be available so she then came upon the idea of growing the grass seeds inside, thus was born (for her) sprouted young wheatgrass. She realised that the body can heal itself providing you give it living sustenance and in her words:
“Living foods for living bodies, dead foods for dead bodies”
The health benefits of wheatgrass juice powder
In his book, Steve Meyerowitz ‘ Wheatgrass Nature’s Finest Medicine’ he states that the 3 most therapeutic roles are : blood purification, Liver detoxification and colon cleansing. However, wheatgrass provides more besides as shown in the chart below:
If you notice there is something quite significant, this is the only plant based product that contains Vitamin B12, so at least individuals that follow a strict vegan diet will consume some B12 if they consume wheatgrass from time to time. As I remarked in the articles on the 90 essential nutrients if your gut flora is in balance there should be no reason not to absorb some B12 within the colon that is manufactured from your own bacterial flora. Because B12 is recycled very efficiently ( the liver retains approx 50% of B12 which it secretes into the bloodstream, and it can do this for 3-5 years without replenishment), the amount required to be ingested and absorbed is minute. A life times supply is approx 40 mg which is the equivalent of 1/7 the size of an aspirin tablet. Approx 1-10 micrograms/day is excreted in the bile and then reabsorbed. So where does the B12 come from in the wheatgrass ? There are some 23 bacteria that produces B12 in the body, but also some species of soil bacteria also produce B12 and they happen to be in the growing soil of wheatgrass, so the grass absorbs it from the soil bacteria.
Multiple health benefits from wheatgrass juice powder
As mentioned in the chart above, in the American Journal of Surgery Dr Benjamin Grushkin in 1940 recommended chlorophyll for its antiseptic benefits, to neutralise streptococcus infections such as in the mouth, so if you are suffering from a toothache which may be due to a bacterial infection, wheatgrass juice powder dissolved in a little water and swirled around the mouth for 5 minutes can actually kill the infection, and pull poisons out of the gums, and eliminate the pain (something that I have tried and it works). Wheatgrass helps to heal wounds, hasten skin grafting, treat chronic sinusitis, chronic ear infection, chronic inner ear inflammation and infection, reduce varicose veins ( Vitamin C intervention), treat ulcers, eliminate impetigo ( infection of the nasal cavity), heal rectal sores, treat inflammation of the uterine cervix, eliminate vaginal infections making this the perfect antimicrobial as well. Wheatgrass acts as a natural detergent in the body and as a natural body deodorant, and as mentioned kills pathogenic bacteria in the oral cavity preventing cavities. Wheatgrass can be gargled to treat throat infections and treat skin infections and Pyorrhea ( periodontal, gum disease) of the mouth using wheat grass pulp applied to the infected area for 5 minutes and then spitting out the pulp. It is a natural skin cleanser from within the body, or apply it directly on the skin pouring the green juice over the skin. Wheatgrass enemas can also be used to heal and detoxify the colon walls. It is also used to ease constipation by keeping the bowels open. Dr Maximilian Oskar Bircher-Benner (1867-1939), a swiss physician ( who popularised Muesli), and nutritional pioneer, referred to chlorophyll as ‘concentrated sunpower’ believing that chlorophyll increases the function of the heart, vascular system, intestines, the uterus and the lungs. It can counteract with and dissolve scars formed in the lungs from carbon monoxide poisoning by increasing haemoglobin production. It can also reduce blood pressure by enhancing blood capillary function, and chelate and remove heavy metals from the body.
Some Enzymes contained in Wheatgrass
Superoxide dismutase (SOD)
If you have read the article ‘ Nutrients in Food and their bodily purpose XV (Nutrients involved in Methylation I)’ concerning cellular energy production, approximately 0.4-4% of the oxygen consumed is converted within the mitochondria to Superoxide (O2) free radical which is highly destructive to our energy factories. Therefore, it needs to be dealt with immediately, so an enzyme Superoxide Dismutase (SOD) is used to convert it to hydrogen peroxide (H2O2), a much less toxic substance to the cell. We will discuss more in future articles, but free radicals or Reactive Oxygen species (ROS) are actually critical in low levels for intracellular signalling ( the name in vogue today is Redox signalling ) to regulate mitochondria production, dependent on the energy needs of the cell, since there are multiple electron transport chains in one mitochondria, and thousands of mitochondria within one cell. On the other hand excessive levels of ROS causes oxidative stress and can lead to pathogenesis. SODs actually require certain minerals to function which include Copper (Cu), Manganese (Mn), Zinc (Zn) which can be replaced with Cobalt if Zinc is in short supply, and iron (Fe).
Peroxidase
A family of enzymes used in various biological processes, nethertheless peroxidase is a major building block based on cofactors that could be selenium producing Glutathione peroxidase or a heme (iron) based enzyme, cytochrome c peroxidase which is used in the mitochondrial Electron Transport Chain (ETC). Glutathione is the body’s master antioxidant.
Phosphatase
The phosphatase enzymes are crucial to many biological function, for example phosphatase enzymes remove phosphate groups using hydrolysis to activate or deactivate enzymatic action, while kinase enzymes complete phosphorylation, that adds a phosphate group that also activates/deactivates enzymatic activity. Within the cell, a process called post translational modification occurs all of the time using kinase enzymes and phosphatase. When a ribosome (the cells protein builders), located in the gel like structure of a cell called the cytoplasm, receives an mRNA, a copy of a particular amino acid sequence, it builds a protein as defined by the mRNA. Once the protein is formed, it is sent to the Endoplasmic reticulum to be cut, folded and held in shape using the Phosphatase/kinase enzymes, and the final product is sent to the Golgi apparatus where is it is packaged into a vesicle for final trimming.
Catalase
In the previous article we explained that this common enzyme, produced by the cell is used to catalyze Hydrogen peroxide (H202) into oxygen and water
Cytochrome oxidase
In article VIII in this series concerning the mitochondria Electron transport chain, Cytochrome c Oxidase is used to transfer electrons between complex III and complex IV **
DNase
This enzyme is used to clear cellular debris from dying or apoptotic cells. The actual debris that it targets is the degradation of DNA into nucleosomal units and it is normally secreted into most body fluids by certain endocrine and exocrine glands.
Hexokinase
Hexokinase is regarded as a ‘housekeeping’ enzyme whose preferred substrate is glucose, which is the reason that it activates glycolysis at the front end of cellular energy production. Since the phosphorylation of glucose to glucose 8 phosphate is a rate limiting step of glucose metabolism, this enzyme is very important in regulating healthy glucose levels in the body.
Malate dehydrogenase
Since enzymes are involved in almost every biological process in the body, Malate dehydrogenase located in both the mitochondria and cytoplasm, is used in the mitochondria Krebs cycle of the cellular electron transport chain in a oxidoreductase capacity ( that is, to catalyse the electron transfer between the electron donor or reductant and the electron acceptor or oxidant). In the cytoplasm, this enzyme catalyzes oxaloacetate ( an intermediate substance of the Krebs or citric acid cycle where it reacts with acetyl-CoA to form citrate) to malate ( malic acid that gives the sour taste in some fruit species) to allow transport. In other locations of the body this enzyme is used in amino acid synthesis, gluconeogenesis and oxidation/reduction balance.
Nitric oxide reductase
Nitric oxide (Nitrogen Monoxide) NO is important for cellular signalling that coordinate cell activities involving long range allosteric regulation ( enzymatic regulation of effector molecule attachment at remote sites other than an enzyme’s active site). An example of allosteric modulation is the negative feedback loop that regulates glycolysis ( the input stage to cellular energy production). Phosphofructokinase enzyme is the catalyst in the glycolysis process that is inhibited via the feedback loop by an ATP signal when ATP levels are high at the end stage of the electron transport chain. NO is a powerful vasodilator for vascular smooth muscle relaxation, thus increasing blood flow and is synthesised by the amino acid L-Arginine from endothelial nitric oxide synthase (eNOS) enzymes. Pharmacologically, Viagra (Sildenafil citrate) stimulates penile erections by enhancing signalling through the nitric oxide pathway. Nitric acid provides the same effect on the female clitoris as well. Green leafy vegetables and beets contain high concentrations of Nitrate, and when consumed, the nitrate is converted to nitrite on the surface of the tongue by commensal anaerobic bacteria. The nitrite substance is then swallowed and reacts with stomach acid producing high concentrations of nitric acid to maintain gastric mucosal blood flow and to prevent food poisoning by sterilization. In effect green leafy vegetables and this nitric oxide production process are cardioprotective, reducing blood pressure naturally. A similar beneficial conversion occurs on the skin to prevent fungal infections where commensal bacteria convert nitrate in sweat to nitrite. We also know that Nitric oxide is secreted by immune system phagocytes ( monocytes, macrophages, neutrophils) as a free radical that is toxic to bacteria and intracellular parasites, which can also induce apoptosis in other healthy cells which is ‘ a cost of doing immune system business’. If you treat cut flowers with nitric oxide it extends the time before the flowers begin to wilt. Blood sucking creatures carry NO in their saliva exploiting its vasodilation effects to guarantee their blood meal. The reason that some diabetic patients have their feet amputated is due to the insufficiency of nitric oxide, causing vascular damage, leading to decreased blood supply to the body’s extremities. Patients in ICU with lung injury or some other pulmonary or respiratory dysfunction are administered NO.
Nitric oxide reductase is involved in nitrogen metabolism and in microbial defense against nitric oxide toxicity. Nitrogen metabolism is a huge subject and cannot be covered here, suffice to say that nitrogen metabolism is based on ammonia NH3 recycling. Bacterial species need useable nitrogen which is derived by atmospheric Nitrogen N2, while useful nitrogen for animal metabolism comes from proteins in the form of ammonia that concerns amino acid synthesis. Since many bacteria produce nitric oxide the host needs to modulate its production to avoid toxicity.
** Historical sidebar : Dr Charles MacMunn (1852-1911) an Irish physician who carried out research on the side of his normal practice, found in 1884 a pigment inside tissues that varied in a similar manner to Haemoglobin, but could never explain the absorption spectrum ( a pattern of light absorbed by a compound) but thought that it was a ‘respiratory pigment’. It was only in 1925 a Russian born scientist David Keillin (1887-1963) rediscovered this pigment and attributed it 3 pigments in the spectrum and coined the phrase Cytochromes (Cellular pigments) a,b and c
Helicobacter pylori (H.Pylori) -( previously called Campylobacter pylori)
Most bacterial pathogens ingested are unable to colonise the gut because of the gastric acid barrier of the stomach, but H.Pylori, a gram negative microaerophilic bacterium can survive this harsh acidic environment andactually lives in the human stomach and attacks the stomach lining causing ulcers. H.Pylori is capable of defending itself from this barrier by synthesising a urease enzyme that creates an alkaline environmental shield. As we explained above, consuming green leafy vegetables and beets that contain nitrate in high concentration, is converted bacterially in the mouth to nitrite. Once this reaches the stomach it reacts with the hydrochloric acid to produce high concentrations of nitric acid which according to a referenced study can breach the Pylori alkaline defense system and kill the pathogen. However, in general, by maintaining gut balance this pathogen which by the way resides harmlessly in the body is kept in check by our beneficial flora.
Dr Barbara Moore (1903-1977)
Interestingly, in Wigmore’s wheatgrass book she talks about Dr Barbara Moore who walked from San Francisco to New York, a 3,387 mile walk in 86 days arriving in July 1960. Previously she walked from Edinburgh Scotland to London UK, a 400 mile journey, and in early 1960 she walked from John O’Groats to Land’s end, a 874 mile journey in 23 days. In 1960 she also made the 539 trek from Albury to Balcktown in Australia. Moore was a vegetarian and claimed that it was possible for people to survive without food, and the food she did take on her marathon walks consisted of fruit, nuts, honey, celery juice, grasses and edible weeds. She also was adamant that people if they gave up smoking,alcohol and sex they could live to be 200. Despite all her claims and her many long marathon walks and healthy eating she died in 1977 bankrupt and near starvation. To prove her health theories she planned to build a laboratory next to her home in the UK but became embroiled in legal battles that cost her $85,000, with the high court of justice over building arguments concerning sewer and access roads within her neighborhood which took her life savings and ultimately her will to live.
Equivalences
It is commonly recommended that an individual should consume 7-10 cups of vegetables and fruit everyday for nutritional and health purposes. This is equivalent to 7-10 ounces ( in a salad form, more if it were fruit and vegetables. Three and a half scoops ( 1 scoop is 2.5 grams, so 3.5 scoops = 8.75 grams) of wheatgrass juice powder is the equivalent of 7 cups of salad or 5 scoops = 10 cups of salad. The equivalency shown here is a little like the apples and oranges comparison since salads, vegetables and fruit contain fibre, wheatgrass juice powder does not. However, what is more important is the nutrient density of salads/vegetables and fruit compared to wheatgrass juice powder, since good quality wheatgrass juice powder is grown in ancient sea beds compared to vegetables salad and fruit grown in organic soil then the nutrient density of wheatgrass would be higher.
Plant Hormones
The interaction of plant hormones and our own gut flora is a science that has not been studied to any great extent. We are aware of Abscisic acid (ABA) which is plant hormone. It derives its name from the word abscission that refers to the shedding of leaves from deciduous ( meaning falling off from maturity) plants during the fall. However, this hormone is also secreted in response to environmental stress of the plant like drought and soil salinity, cold and heat. To prepare for winter, ABA is produced to slow plant growth and protect the dormant buds until spring. It also inhibits cell division suspending growth In time of drought this hormone regulates the plant as a kidney does in humans by regulating water loss, in the case of the kidney, water is retained by reabsorption , in terms of a plant, water is retained by reducing transpiration, or evaporation of water from the pores of the leaf known as stomata. ABA is contained in Wheatgrass. Gibberellin is another plant and fungi hormone. The name comes from a japanese fungus Gibberella Fujikuroi that secretes and infects rice, barley, millet, sugarcane and maize with a growth hormone Gibberellin Acid (GA) resulting in the overgrowth of the plant until it grows higher than normal and collapses. When the plant secretes its own indigenous GA in small quantities it stimulates growth by stimulating germinating seed cells producing mRNA molecules that code for hydrolytic enzymes. The only thing we do know is that ABA rich fruits and vegetables such as apricots, apples, carrots and sweet potatoes stimulate glucose uptake in the body.
Conclusions and closing notes
SOD
As Ann Wigmore once wrote ‘Life comes from Life’ so dead nutrition only stimulates deterioration in the body. Look around you and witness the premature ageing of individuals with excess facial wrinkles, excess fatigue, moving as if they were one of the walking dead, or as Dr B states ‘the walking wounded’, only to be told by physicians when you complain of having no energy or pain or arthritis that “ it’s just old age”…NO IT IS NOT, its lack of adequate nutrition and/or excessive toxicity, so as If have stated before, why would your listen to an individual who represents a profession whose average age is 58. We mentioned earlier that one enzyme contained in Wheatgrass is Superoxide Dismutase (SOD), which has a bearing on slowing down the ageing process. SOD exists in every cell to convert this highly toxic superoxide into hydrogen peroxide. Dr Barry Halliwell biochemist at the University of London, Dr M.Rister University of Cologne and Dr Irwin Fridovich biochemist at Duke University North Carolina all independently have investigated the role that this enzyme plays in slowing down cellular ageing. They found that SOD lessens the effects of radiation, has anti-inflammatory properties, and above all prevents cellular damage. When cells get damaged, the damage shows up as premature ageing.
P4D1
During the 1980’s a biologist Dr Yasuo Hotta working at the University of California isolated an enzyme from Barley juice found in grasses including Barley and Wheatgrass which was named P4D1. He discovered that this enzyme stimulated the DNA repair process using reproductive cells. His experiments involved damaging spermatocytes with X Radiation and and another group using a toxic chemical. By splitting the cell groups into one that were allowed to recover on their own and the other group that was administered the P4D1 enzyme the DNA repair was much faster. Interestingly, even Hippocrates used Barley gruel for his sick patients.
Lipofuscin
In his book ‘Theoretical aspects of ageing’ P.Gordon explains that when cells are damaged by free radicals the damage residue exist as intracellular accumulation called Lipofuscin pigments, which inhibit the flow of oxygen in the cell. Dr Joel Wallach describes these as rancid fat from cell walls, and if you have 10 or more brown spots on the back of your hand ( doctors call these liver or age spots ), then you have thousands on the inside of your body. The 90 essential nutrients taken daily and an adequate intake of antioxidants should reduce these spots. Vitamins A,C and E are natural antioxidants that should be found in many foods, and are part of the 90 essential nutrients that should be supplemented, without relying on food that may or may not contain them, but certainly wheatgrass juice powder contains these vitamins.
You are only as young as your blood
As I mentioned earlier wheatgrass juice powder contains 70% chlorophyll which Dr Bernard Jensen in his book ‘Chlorophyll Magic from living plant life’ explains that green juices and wheatgrass are the superior blood builders, and blood rich in iron transport supplys more oxygen to the cells promoting youthfulness and preventing senility. Wheatgrass in its ability as a blood builder is an alkaline substance that uses its mineral content to maintain assisting the body’s internal system to maintain the tight blood PH levels at 7.3-7.45. Wheatgrass contains adequate calcium providing the essential buffering to balance blood PH, and a good source of iron. It is also speculated, specifically by Dr Yoshihide Hagiwara, a japanese scientist, that since chlorophyll is soluble in fat particles which are absorbed directly into the blood via the lymphatic system, it can also find its way into the blood by the same mechanism. His opinion therefore is that the magnesium ion in chlorophyll is easily replaced with iron to manufacture new hemoglobin.
To end this article I invite you to read the book ‘How I conquered cancer naturally’ by Eydie Mae, who according to Wigmore’s Hippocrates diet and health program documents the case of Mae who had malignant breast cancer and it was also in other parts of her body, when she visited the Hippocrates institute, on advice from Wynn Davis whose son had died of cancer when he was 21. Within 2 years on the Hippocrates diet program that is heavily influenced by Wheatgrass, Eydie Mae recovered. I do not doubt this story for a moment, but when the body has expressed cancer it is desperately waiting for nutrients to enter the body, and if conventional medicine has not completely destroyed the body, specifically digestion, and your body is able to absorb nutrients you have given the body the tools to get to work on potentially reversing the condition with the help of your own willingness to get well, attesting to the power of belief. It is my opinion that it is ‘leap of faith’ to say that wheatgrass can cure cancer, it is a collaborative effort, where wheatgrass is one collaborator.
